1 1/2 cups all purpose flour
3/4 cup sugar
3/4 cup chopped walnuts (about 3 oz.)
1 1/2 t. baking soda
1/4 t. salt
1 1/4 cups mashed ripe bananas
1/2 cup (1 stick) unsalted butter, melted
1 egg
2 1/2 T. milk

Directions:

Preheat oven to 350 degrees F. Grease twelve 1/2 cup muffin cups. Mix
together flour, sugar, chopped walnuts, baking soda and salt in large bowl.
Combine bananas, butter, egg, and milk in medium bowl. Add banana mixture
to dry ingredients, mixing with a spatula until combined. Divide batter
among prepared cups. Bake until tester inserted into center comes out
clean, about 25 minutes. Transfer muffins to rack and cool. Serve warm
or at room temp.
