2 ¼ cups all purpose flour
1 cup sugar
1 cup chopped pecans
1 cup butter
1 egg
1 (18 oz.) jar apricot preserves (Smuckers recommended)

Directions:
Directions:
Preheat oven to 350 degrees. Spray jellyroll pan (10 x 15) with Pam or lightly grease.

In 3 quart mixing bowl, combine flour, sugar, pecans, butter, and egg. Beat at low speed, scraping sides often until mixture is crumbly (2-3 minutes). Set aside 1 ¼ cups of the crumb mixture. Press remaining crumb mixture into pan evenly. Spread preserves to within ½ inch of edge of unbaked crumb mixture. Sprinkle reserved crumbs over preserves. Bake for 30-35 minutes or until lightly brown. Let cool completely. Cut into squares.
