2 cups all purpose flour
1 cup sugar
1 cup chopped pecans
1 cup butter
1 egg
1 (18 oz.) jar apricot preserves (Smuckers recommended)

Directions:
Directions:
Preheat oven to 350 degrees. Spray jellyroll pan (10 x 15) with Pam or lightly grease.

In 3 quart mixing bowl, combine flour, sugar, pecans, butter, and egg. Beat at low speed, scraping sides often until mixture is crumbly (2-3 minutes). Set aside 1 cups of the crumb mixture. Press remaining crumb mixture into pan evenly. Spread preserves to within inch of edge of unbaked crumb mixture. Sprinkle reserved crumbs over preserves. Bake for 30-35 minutes or until lightly brown. Let cool completely. Cut into squares.
