2 lbs. fresh mozzarella curd
1 gallon boiling water
1 cup Kosher salt
Ice
2 stainless steel bowls
2 large spoons
6 qt. pot

Directions:
Directions:
Cube curd into 1" pieces. Fill 1 bowl 3/4 full with ice water.
Place curd into second bowl; pour 1/2 boiling water over curd to cover. Using 2 large spoons, work the curd back into a ball; pour off the water. Pour remaining boiling water over the curd and start stretching the curd with the spoons until it is smooth and elastic. Shape as desired and chill in the ice H2O.
