1 (10oz) package frozen spinach. Thawed drained and squeezed dry
1 (10oz) can chopped tomatoes and chilies, drained
1 (8oz) package cream cheese, softened and cubes
1 c. sliced black olives
2 c. grated Monterey Jack cheese
1 T. red wine vinegar
2 T cornstarch
1 C. half and half

Directions:
Directions:
Combine spinach, tomatoes and chilies, cream cheese, olives, Monterey Jack cheese and vinegar in a mixing bowl. In a small bowl, combine cornstarch and half and half mixing thoroughly. Combine cornstarch mixture and spinach mixture stirring until well blended. Pour into a greased, shallow baking dish. Bake at 400 degrees for 30 minutes. Serve with chips.
