3 1/2 cups Swiss, grated
1 cup Muenster, grated
2-3 tablespoons all-purpose flour
1 clove garlic, minced
1 cup dry white wine (Neuchatel or Chablis)
2 tablespoons Dijon mustard
1 teaspoon fresh lemon juice
1/2 teaspoon finely ground white pepper
1/2 teaspoon dried onion
Dash cayenne (optional)

In a large glass bowl, toss the grated cheese with the flour until coated. Set aside in a 2-quart fondue pot or other enamel-coated pot, heat the garlic and wine over a medium flame for 5 minutes. Add the cheese, 1 cup at a time, and heat until soft and easy to stir. Add the mustard, lemon juice, pepper, onion, and cayenne, stirring constantly for another 3 minutes. Keep the pot over low flame and serve with bread, fruit, and prosciutto.
