1 lb. brussel sprouts
½ lb. bacon or pancetta
¼ cup butter
1 T sugar
2 T lemon juice
2 chopped cloves of garlic
truffle oil, to taste
salt and pepper to taste

Directions:
Directions:
In a large skillet, cook bacon until crisp and set aside on a paper towel. Drain the bacon fat, reserving about 1-2 T. Add the butter, melting it with the reserved bacon fat over medium-low heat until sizzling.

Add the thinly sliced brussel sprouts and garlic and sauté for 1 minute. Turn heat to low and cook for 5 minutes, tossing frequently. Sprinkle sugar (or splenda) and lemon juice over the sprouts, turn heat up a bit to medium and continue to cook another 6-8 minutes, or until the sprouts are caramelized and there are crispy bits.

Add truffle oil to taste (start with 1-2 teaspoons) and toss for another minute. Add salt and pepper. Transfer to serving dish and crumble crisp bacon on top.
