3 eggs
1 c. vegetable oil
2 c. sugar
3 tsp. cinnamon
1 tsp. vanilla
tsp. baking powder
1 tsp. baking soda
1 tsp. salt
3 c. flour
2 c. grated zucchini (peeled & seeded)
1 c. nuts

Directions:
Directions:
Beat eggs until foamy. Beat in oil, vanilla & sugar. Mix well.

Beat in zucchini. Sift in dry ingredients.

Split batter between 2 greased & floured loaf pans.

Bake at 325 for 1 hour.
