½ cup chopped onion
1 clove garlic minced
2 tsp. Veg. Oil
2 ½ cups water
1 can beef broth
1 can black beans, drained and rinsed
1 can chopped tomatoes, undrained
½ cup uncooked rice
1/3 cup picante sauce
1 tsp. Ground cumin
¼ tsp. Dried oregano
Grated cheddar cheese
Avocado
Lime wedges
Chopped fresh tomatoes

Directions:
Directions:
Cook onion and garlic in oil. Add all remaining ingredients. Bring to boil, reduce heat, simmer 30 minutes, or until rice is done.

Top each serving with grated cheddar cheese, avocado, chopped tomatoes and lime wedges. The lime is very important. Squeeze on the bowl of soup. Adds a fresh taste!
