¼ c flax meal
1 large egg
½ tsp. baking powder
1 packet sucralose or whatever sweetener you choose

Add the egg and mix thoroughly. Bang the mug on a flat surface a few times to remove air bubbles. Microwave for 85 seconds (microwaves can vary).

The original recipe from the Atkins website calls for the addition of 1 tsp of cinnamon and
1 tsp melted butter, but I don’t bother, and it tastes fine and moist without it. The flaxmeal has a lot of fat so it doesn’t stick to the mug. I usually remove it from the mug, slice it in thirds and toast it, just because I like toast. I serve with cream cheese and lox, or BLT, or fried egg, mayo and mustard.

I have also made these without the sweetener and added a dash of salt, garlic powder and
½ tsp. of dried onion. Once you’ve made one, you can play with it (the recipe; not the muffin).

You can also make these in a custard cup so it’s bigger for making sandwiches.
