8 Slices Bacon
16 Pitted Medjool Dates
4 oz. Goat Cheese (I like Trader Joe's)
Toothpicks

Directions:
Directions:
Preheat oven to 350º

1.Slice dates lengthwise and remove the pit.

2. Using a spoon, stuff a small amount of goat cheese into each date and press sides to close.

3. Cut each slice of bacon in half. Wrap each date with a piece of bacon and secure with a toothpick.

4. Arrange on a baking sheet (with raised edges or a rack works best to trap the grease) and bake for 10 minutes. Turn each date so it is laying on the other side and bake for another 5-8 minutes until browned.

5. Let stand for 5 minutes before serving.
