1 large Prime Rib roast (whatever size you want)
3 tbsp crushed garlic cloves
1 tbsp of fresh rosemary
2 tsp each of salt and pepper
2 tbs melted butter
1 tbsp Dijon mustard

Directions:
Directions:
Heat oven to 450º
In small mixing bowl combine garlic, rosemary, salt & pepper, melted butter and mustard and then rub over the prime rib.
Place the beef on a roasting rack in a roasting pan
Roast for 15 minutes and then reduce to heat to 350º. Roast until meat thermometer reads 140º for medium-rare
Remove to a cutting board, cover with foil and let rest for 15 minutes before slicing. Place pan on top of stove and leave at least 2 tbsp of drippings in the pan and stirring constantly add couple of tablespoons of flour and some beef broth to make a gravy. Bring to a boil to thicken and adjust accordingly.
