2 pkg Jimmy Dean Hot Pork Sausage, crumbled
8 - 10 slices White Bread, torn into medium pieces
1/2 lb Brie Cheese, top rind removed and discarded, cut into small diced pieces
1 C Fresh Parmesan Cheese, grated or shredded
8 extra large Eggs, whisped
5 C Half & Half'1/4 C Fresh Chives, finely chopped
1 Tbsp Gabby's Mustard
1 tsp Dried Rubbed Sage
1 tsp Fresh Ground Pepper, or to taste
1/2 tsp Salt, or to taste
Hungarian Paprika for color garnish

Prepare this casserole the night before serving.
Brown sausage in a large skillet; drain. In a large, shallow baking dish, sprayed with non-stick spray, arrange bread pieces in the bottom. Next, layer the sausage, diced Brie, and Parmesan cheeses. Whisk together eggs, half & half, chives, mustard, sage, salt and pepper. Pour liquid mixture over the bread and sausage and sprinkle with paprika. Cover with plastic wrap and refrigerate overnight.

Remove from refrigerator 1 hour before baking. Bake, uncovered, in a 350º oven for 1 hour or until custard-like set in middle and lightly browned all over the the top.

Great for any holiday brunch, but especially for Easter and a happy Easter to you!
