One Pan Chicken & Veggies Recipe

1 small sweet potato
1 # boneless skinless chicken breast
1¾ c. assorted sweet bell peppers
1½cups green beans
2 heads broccoli (or cauliflower)
Seasoning:
5 T. olive oil
2 t. chili powder
1 t. paprika
1 t. white sugar (I use a drizzle of real maple syrup)
½ t. onion, garlic & cumin powder
¼ t. cayenne
1 t. salt
Optional: ¾ c. shredded cheese, fresh cilantro, lime

Directions:
Directions:
Preheat the oven to 425º F. Line a very large sheet pan with parchment paper.
Prick sweet potato and microwave for about 4 min., turning once.
Cut chicken into 1/2 inch pieces.
Cut all veggies in bite size pieces
Place all on the sheet pan.
Combine the olive oil and all of the seasonings.
Pour over the veggies and chicken. Toss with your hands until everything is well coated.
Bake for 10 minutes, flip and bake for another 10-20 minutes
Remove from the oven and top with the cheese if desired. Return to the oven for 1-2 minutes or until the cheese is melted. Sprinkle with cilantro & lime if desired.
