2 t olive oil
1 bell pepper coarsely chopped
4 ribs celery chopped
1 med yellow onion chopped
4-6 cloves garlic minced
14 1/2 oz can stewed matoes
1/2 cup water
1/2 t salt
1 cup spicy V-8 juice
seafood as desired

Directions:
Directions:
Heat oil over medium heat until hot.
Add pepper, celery, and onion. Cook, stirring frequently 5-6 min.
Stir in garlic. Cook, stirring constantly, 1 min
Stir in matoes, juice, water, and salt. Cover and heat to boiling. Reduce heat to low and simmer, covered, 10 min.
Stir in seafood, cover, simmer 3-4 min.
