1 Tbsp butter
1 T olive oil
2 cloves garlic minced
1 medium onion chopped
1 jalapeno finely chopped
1/4 t red pepper flakes
1/2 t Mexican oregano
2 roma tomatoes chopped
1 lime zest and juice
1/2 t salt/pepper
1 lb shrimp
2 T cilantro chopped

Directions:
Directions:
Melt oil and butter in skillet over medium-high heat.
Add garlic, onion, jalapeno. Cook, stirring, about 3 min.
Add pepper flakes, oregano. Continue cooking about 3 min.
Add tomatoes. Cook, stirring occasionally until matoes are soft.
Add shrimp, zest, juice, salt, pepper. Cook until shrimp are opaque.
Remove heat, stir in cilantro.
