Gordon's Thanksgiving Yams Recipe

2 lrg. 40 oz cans cut yams
2 eggs
1/2 cup sugar
1 teaspoon vanilla
1 stick butter, melted

Topping:

1 cup light brown sugar, packed
1/3 cup flour (self-rising is best)
1/2 stick butter, melted and cooled
1/2 cup chopped pecans

Directions:
Directions:
Drain the yams and using a mixer or by hand, beat the yams to mash them. In a separate bowl, beat the eggs and fold in the sugar, vanilla and melted butter. Add the egg mixture to the yams and blend together. Spread the yam mixture in a glass 9 x 13 baking dish.

Topping:
Mix the brown sugar and flour together in a small bowl. Blend in the cooled butter a little at a time. You can use an electric mixer set on low. Next crumble the topping over the yams. Sprinkle the chopped pecans over the topping.

Bake yams in a 350º oven for 30 minutes.
