3 cups potatoes, peeled and shredded
3 cups sliced white leeks
1½ quarts chicken stock
salt to taste
½-1 cup whipping cream
white pepper

Simmer vegetables, partially covered, for 40-50 minutes, uncovered 15 minutes. Puree the soup in food processor. If not perfectly smooth, put through a sieve. Add ½-1 cup whipping cream, salt and pepper (season to taste). Chill.

Serve with minced chives.
