Ingredients: Seasoning mix - 1 -6 oz can of tomato paste -1 tablespoon minced garlic -1 teaspoon of salt (adjust to your liking) -1/2 teaspoon black pepper -1 tablespoon chili powder -1 teaspoon cumin -1 teaspoon paprika Stuffed Pepper mix 4 large bell peppers 1 small cauliflower head (riced) 2 tablespoons olive oil 1 large onion diced 1 cup chopped cilantro 6 oz shredded cheddar cheese

Directions:Preheat oven to 350 degrees F. Brush a square 8inch baking dish with olive oil In small bowl mix together tomato paste and dry ingredients set aside Remove tops to peppers core and seed them Place cauliflower into food processor. Process until it resembles rice. You should get about 2- 2 ½ cups of riced cauliflower Heat olive oil in large deep saucepan over medium high heat about 2 mins. Add the riced cauliflower onion and beef and cook, stirring and breaking beef up as it cooks, until cauliflower and onion are soft and beef is lightly browned, 5-7 mins Add seasoning mixture. Cook 2 more mins stirring until everything is well blended. Remove from heat and stir in cilantro and cheese. Fill each pepper ¾ full with mixture, packing it in and place on the prepared baking dish. Brush peppers with olive oil and bake for 30 mins .Top off with more cheese just before seving |
