1 ½ cups all-purpose flour
1 ½ tsp. baking powder
¼ tsp. baking soda
¼ tsp. cinnamon
¼ tsp. ground ginger
¼ tsp. ground cloves
1 egg
1 cup mashed ripe bananas (3 medium or 2- 4 oz. jars of mashed banana baby food)
¾ cup sugar
¼ cup cooking oil
1 tsp. finely shredded lemon peel (optional)
¼ cup chopped nuts (optional)

Directions:

In a large mixing bowl combine the flour, baking powder, baking soda, salt, cinnamon, ginger and cloves.

In a separate smaller mixing bowl, mash the bananas. Add the egg, sugar, cooking oil and, if desired, lemon peel.

Add to the flour mixture. Stir until thoroughly moistened. If desired, add nuts.

Pour batter into a greased 8x4x2-inch loaf pan.
Bake at 350º for 45 minutes or until a toothpick inserted near the center comes out clean.
Cool for 10 minutes on a wire rack. Remove from the pan; cool thoroughly on a wire rack.
