Sweet Potato Burgers Recipe

Ingredients: 1 c. rice, cooked
1 can of black beans
2 sweet potatoes
2 green onions
1 Tbsp. shili powder
salt
pepper
cooking spray

Directions: |
Directions:Open the can of black beans, rinse off the beans.
Poke holes in the sweet potatoes and put in the microwave for about 8 minutes.
Peel the cooked sweet potatoes.
Preheat the oven to 350º.
Add beans to a bowl and mash with a fork.
add the rice and sweet potato.
Add green onion, chili powder, salt and pepper
Mix together until well combined.
Spray a baking sheet with cooking spray.
Form the mixture into patties. Should come up with about 8 of them.
Place on baking sheet and spray the tops with more cooking spray.
Place in oven for about 20 minutes.
We recommend serving with a mixture of Sweet Baby Rays BBQ sauce and mayo.

Notes: This is one of the first recipes that Casey and I made together. It was early on when we first started dating and we were trying to find things we could make that both of us could eat. With Casey being a vegetarian at the time and me not having much experience with that sort of a restriction, this seemed to be a good middle ground for us.
So this recipe holds a special place for us as one of our first meals we made together.
Side note: also goes great as a taco when you have leftovers.
