DOUGH
3 c. flour
2 c. shortening
2 T sugar
2 egg yolks
2 T water

FILLING
3/8 cup flour
1 ˝ c. milk
1 ˝ c. sugar
1 ˝ c. shortening
1 ˝ t. vanilla
dash salt
confectioners’ sugar, optional

Directions:
Directions:
Blend flour, sugar, and 1/2 of shortening.
Beat yolks in water till foamy. Blend into flour mixture to form a slightly sticky dough.
Wrap in plastic and refrigerate for an hour.
Roll to rectangle 1/2” thick. Spread with 1/2 c. shortening. Fold dough in thirds and refrigerate, wrapped, for another hour and then repeat with remaining shortening. Refrigerate overnight.
Remove dough in small batches and roll to 1/8” thin - don’t knead shortening into the dough.

FILLING: Combine flour and milk; heat and stir till thick; cool completely.
Combine sugar, shortening, vanilla, and salt, then blend with flour/milk mixture.
Chill and then fill cookies.
Optional: dust finished cookies with confectioners’ sugar.
