3 c flour
2 t cream of tartar
1 t baking soda
1 1/2 t cinnamon
1/2 t salt
1 c butter softened
1 1/3 c sugar
1 large egg
2 t vanilla
topping:
1/3 c sugar
1 t cinnamon

Directions:
Directions:
Preheat oven to 375. Line 2 cookie sheets with parchment paper. Make the topping. Combine the sugar and cinnamon together in a bowl. Make the cookies. Whisk together the flour, cream of tartar, baking soda, cinnamon and salt. In a large bowl using a mixer beat the butter and sugar on high until smooth and creamy. Add the egg and vanilla. Beat on medium until combined. Scrape down the sides and from the bottom up. Beat the dry ingredients in slowly. The dough will be thick. Roll 2 T dough into ball. Roll the balls in cinnamon sugar mixture. Arrange cookies 3 inches apart on cookie sheet. Bake 10 minutes. The cookies will be very puffy and soft. When they are still warm lightly press down with a fork or spoon to flatten. Allow cookies to cool on cookie sheet for 10 minutes before moving to wire rack.
