24 large tomatoes - Peeled, cored and crushed
2 cups chopped white onion
2 cups chopped green pepper
1-2 3oz can chopped green chilies
4 T, fresh cilantro, chopped
3 T. canning salt
1 large celery stalk, chopped
1 cup white distilled vinegar
12 jalapeno peppers
1 head garlic, chopped
1/2 cup sugar, or to taste

Directions:
Directions:
Add all ingredients except vinegar & 6 jalapenos to a pot. Cook for 45 minutes or until thick. Taste and adjust with more onion, garlic, peppers and cilantro if needed. Add vinegar and remaining jalapenos (adjust for spice preference). Bring mixture back to a boil. Pour into pint jars and process in water bath for 25-30 minutes. Adjust bath time for higher altitude.

Makes about 3 quarts
