1 medium to large size Eggplant, cut in half lengthwise and stems trimmed
3 tbsp. olive oil
½ tsp. pink Himalayan sea salt
½ tsp. ground black pepper
1 24 oz. jar of Rao's homemade marinara sauce or my mom's homemade spaghetti sauce (see recipe)
1 lb. ground beef or ground Italian sausage
2 cloves of garlic minced
¼ c. fresh or freeze-dried basil leaves chopped (half of it will be used in the sauce and the other half used on the eggplant)
1 c. grated parmesan cheese
½ c. baby Bella mushrooms sliced

1 Gallon ziplock bag

Directions:
Directions:
Place the pieces of eggplant into the gallon ziplock bag, add olive oil, basil, salt, and pepper. Shake the bag up until coated on each piece of eggplant.

Transfer to the tray inside the air fryer basket. Insert basket into Air Fryer.

Set the Air Fryer to 375º and 15 minutes. Continue to do this until all the eggplant has been air fried. Set aside in a closed container to keep warm.

While the eggplant is being air fried, cook the ground beef or ground Italian sausage on a medium-size skillet. Drain the grease. Lower the heat to medium.

Add the garlic and mushrooms until sautéd. Add the marinara sauce and the rest of the basil and simmer.

Place air-fried eggplant halves on plates, then put the meat sauce on top of the eggplant and sprinkle parmesan cheese on top before serving.
