Preheat to 400º.
Line cookie sheet with parchment paper.

2 lb Russet potatoes (6sm or 4med)
2 tbsp olive oil
2 tsp each garlic & onion pwdr
1 tsp sea salt
freshly ground black pepper
2 tbsp chopped fresh parsley or chives

Directions:
Directions:
Wedge potatoes (½s, then diagonals)
Cover in hot water for 10 min.
Drain, pat dry.
Drizzle w/oil; Sprinkle w/seasonings.
Toss to evenly coat.

Arrange in single layer.
Bake 30 min.
Flip wedges, bake til golden & crisp,
25 or 30 min.

This method makes great cheese fries, too!
Sprinkle baked wedges w/shredded cheddar.
Return to the oven for 5 or 10 min.
Sprinkle with fresh chives & serve w/Ranch dressing.
