1 Package Tofu or 1 Package Chicken Tenders
Cup Olive Oil
1 Cup each - Green, Red and Yellow Pepper
1 Package Snow Peas
1 Cup Broccoli and/or Cauliflower
2 T. Red Curry Paste
1 Can Coconut Milk
2-3 Squares of S&B Golden/Red Curry Cubes (optional)
2 Cups Jasmine Rice

Directions:
Directions:
Boil rice according to directions.

Stir fry tofu (or chicken) until brown in Olive Oil.
Remove from pan and add vegetables. Stir fry until vegetables start to soften. Add coconut milk and curry paste or curry cubes (or both).

Add tofu or chicken and serve over rice.

Serve with a variety of sauces - peanut, sweet and sour, etc.
