1 (10 oz.) package frozen spinach, thawed, drained and squeezed dry
2/3 c. mayo
1/4 c. grated parmesan cheese
2 T. minced shallot
1 garlic clove, minced
1/2 t. salt
1/4 t. ground black pepper
1/8 t. cayenne pepper
2/3 c. greek yogurt

Directions:
Directions:
In a large bowl, stir together the spinach, mayo, parmesan cheese, shallot, garlic, salt, pepper and cayenne until completely combined. Gently fold in the greek yogurt. Cover and refrigerate atleast 1 hour.

To be fancy, serve in a sourdough bread bowl. Or simply serve in a bowl with vegetables, crackers, tortilla chips or pretzels.
