One Skillet Stroganoff Recipe

2 Tbs butter
½ onion, diced
1 lb. ground turkey (or beef, chicken, etc.)
2 tsp garlic powder (I also add 1 clove of fresh or jarred minced garlic!)
3 Tbs flour
1 tsp paprika
¼ c. dry sherry, cooking sherry, or beef broth
4 c. beef broth
1 ½ tsp salt
½ tsp black pepper
4 c. dry egg noodles

Optional:
1 Tbs olive oil
8 oz. button mushrooms, sliced
½ c. sour cream
1-2 Tbs parsley

Directions:
Directions:
1. Melt butter in skillet. Add turkey, onion, and garlic powder, cook until turkey is broken up and cooked through. Drain and return to stove top.
2. Stir in flour and paprika until thick (1-2 min.) Splash sherry into the pan and stir, scraping any browned bits from the bottom of the pan. Cook until sherry is evaporated.
3. Gradually stir in beef broth, salt, and pepper. Bring mixture to a boil and add egg noodles. Reduce heat to a simmer and cover. Stir often until noodles are tender, about 8-10 minutes.
Optional: If you like mushrooms, sauté in olive oil prior to cooking turkey. Return to pan after noodles are cooked. If you want a creamier stroganoff, add sour cream at the very end.
