Pearl's German Potato Salad Recipe

5 lbs cooked potatoes, sliced (not cubed or diced)
1 lb bacon, cooked and chopped
˝ c bacon grease (from approx 1 lb cooked bacon)
2 med onions, chopped fine
1 c vinegar
1 c water
1 c sugar
2-3 Tbsp cornstarch
1 tsp salt
1 small jar pimentos
chopped parsley (to taste)
3-4 egg hard boiled yolks

Sauce for potato salad:
Sauté onions in bacon grease until tender. Mix vinegar, water, sugar, and cornstarch together. Add to onions in the bacon grease and heat until cornstarch thickens mixture.

Add remaining ingredients. Mix well and serve at room temperature.
