3/4 lb. ground italian sausage
1/2 c. diced onion
1 1/3 c. water
2 c. marinara (we like Rao's)
2 c. uncooked bowtie pasta
1 1/2 c. zucchini, halved & cut into 1/2 inch slices
1/2 c. carrot, 1/4 inch slices
2/3 c. cottage cheese
3 T. shredded parmesan cheese
1/2 c. shredded mozzarella cheese

Directions:
Cook sausage and onion in large skillet until browned, drain fat. Add water and marinara, bring to a boil. Add pasta, cover and cook on low for 12 minutes. Add zucchini and carrot, simmer uncovered for 8 minutes until liquid is reduced. Combine cottage cheese and parmesan, drop rounds of cheese mixture onto pasta dish and sprinkle with mozzarella.
