1 lb. Ground Italian Sausage
1 c. finely diced onion
1 c. diced carrot
2 c. button mushrooms
2 T. minced garlic
4 c. chicken broth
1 (14.5 oz) can italian style stewed tomatoes
1 cup bowtie pasta
2 c. fresh spinach
1 c. diced mozzarella cheese
1/4 c. shredded parmesan cheese

Directions:
Directions:
Brown sausage over medium high heat. Add onion and carrot, saute for 3 minutes. Add mushrooms and garlic and saute another 3 minutes. Add broth, tomatoes and pasta. Bring to a boil then simmer for 10 minutes. Add spinach and cook 1 minute. Place cubes of mozzarella in your bowl, ladle soup over the cheese and serve garnished with shredded parmesan!
