2 acorn squash, halved, seeded
1 lb. ground turkey or Italian sausage
¼ yellow onion, chopped
2 cloves garlic, minced
1 tbsp. dried parsley
1 c. grape tomatoes, halved
parmesan cheese, grated
salt, pepper, & red pepper flakes

Directions:
Directions:
Preheat oven to 375º. Slice squash in half and remove seeds. Brush each side of squash with olive oil and place cut side up on a sheet pan. Roast for 30-40 minutes until fork tender. In a large skillet, heat 1 tbsp. oil, sauté onions and garlic for about 5 minutes. Add meat and brown, then drain. Add parsley, tomatoes, and seasoning. Stuff each squash with meat mixture and top with cheese. Return to oven until cheese is melted.
