Cheese & Veggie Pie Recipe

Pastry for single crust pie
About 2 c. cheese (old, cheddar or your favourite or a mix)
1 onion
1 or 2 potatoes
1 t. oregano, basil or Italian seasoning
3 eggs
1 c. milk
s & p

Directions:
Directions:
Line pie pan with the pastry.
Sprinkle bottom with the cheese.
Slice and cook the potatoes and onion. (I microwave them until soft)
Spread on top of cheese and sprinkle with the herbs, salt and pepper
Beat the 3 eggs and 1 c. of milk together and pour over the potatoes.
Bake at 400ºF for 10-12 minutes. Reduce temp. to 350ºF for 35-45 minutes until set.

I sometimes replace the potatoes with broccoli and/or cauliflower. And sometimes I just add one potato with broccoli or cauliflower that is left over from a previous meal. I even added sliced tomatoes on top before baking.
My friend and former neighbour, Barbara Lister shared this recipe and it's one of my favourites. I guess it is a 'take' on the quiche.
