4 C rhubarb, diced
1 C sugar
1 tsp lemon rind
1 package white cake mix

Directions:
Directions:
Mix cake according to directions. Pour into 9 " square pan. Top with rhubarb and lemon rind. Sprinkle sugar over the top. Bake at 350 degrees 40 - 45 minutes then cool. Sprinkle with powdered sugar or serve with whipped cream.
