4 Cups old fashioned oats
1/4 Cup whole wheat flour
1/2 Cup shredded unsweetened coconut
1 Cup chocolate chips
1/2 tsp kosher salt
1/2 Cup vegetable, canola, avocado or other oil of choice
1 tsp vanilla extract
1/2 Cup honey

Directions:

1. Preheat oven to 325ºF.

2. Combine the first 5 ingredients in a bowl.

3. In a separate bowl, whisk together the remaining ingredients (oil, vanilla, honey)

4. Pour the wet ingredients over the oat mixture and stir to combine. Make sure you combine really well!

5. Place granola mixture on a parchment lined baking sheet and shape into a rectangle, about 13 x 9 x 1 inch thick.

6. Use a second piece of parchment on top of the granola rectangle and use a rolling pin (or your muscles) to make sure the mixture if really well packed before baking

7. Bake for 25 minutes – edges will be light brown

8. Allow to cool completely then cut into 3 x 1 inch bars.**

9. Store in air tight container
