3 C Water
2 C Chicken Broth/Stock
¼ C Butter, divided
½ C Onion, chopped
1 C Arborio Rice, uncooked
⅓ C Dry White Wine
½ C Heavy Cream
¼ C Parmesan Cheese, freshly Grated
Salt & Pepper

Heat Water and Broth over Medium heat and simmer

Melt 2 TBLS Butter in saucepan, add onion and cook until soft, add Rice and stir 2-3 minutes, add Wine and stir until absorbed. Increase heat and stir in 1 C Water/Broth and cook uncovered stirring until liquid is absorbed. Keep repeating by 1 C at a time until all of the liquid is absorbed.

Stir in Cream, Parmesan Cheese and remaining Butter. Cook until rice is tender and creamy approximately 2 minutes

The variations to this are endless. Here are a few suggestions:
***Add Pancetta or Prosciutto that has been cooked
***Add Asparagus that has been precooked and cut into bite size pieces with a little lemon zest
***Add Peas
*** Add precooked Shrimp or Trader Joe's Seafood Blend
***Add Chicken
***Add Winter Squash with a bit of Sage and toasted Almonds or Pine Nuts
***Add whatever combination you like
If you want to cut some calories, you can eliminate the Heavy Cream
