Egg roll mixture:
to head of cabbage, shredded (or 1 pkg. coleslaw mix)
1 can tiny shrimp, drained
1 can large shrimp, drained
1 can bean sprouts, drained
2 T. soy sauce
salt & pepper

16 egg roll wrappers
Oil (for frying)

Directions:
Directions:
Heat 2 T. oil in skillet. Add cabbage or coleslaw blend and stir-fry on high heat about 5 minutes. Remove from heat and add shrimp, sprouts, soy sauce and salt and pepper to taste.

To assemble, place 2 T. filling on egg roll wrapper, near corner towards you. Then fold over left and right sides. Dampen edges of the corner that is away from you, and finish rolling.

Deep fry at 350F (or just use a fry daddy), until golden brown.

Drain on paper towels and enjoy!
