Whole chicken
salt (2 table spoons)
black pepper (1/2 tsp)
paprika (1 tsp)
saffron (1/4 tsp crushed into fine powder)
2 tbsp olive oil
2 lemons

Directions:
Directions:
1. I start off by squeezing a whole lemon on top of the chicken and then salting it evenly, then add the rest of the spices and 2 tbsp olive oil.

2. I massage the chicken with the spices and olive oil to ensure everything is covered.

3. I also put some salt inside the body of the chicken and stuff with half a cut lemon.

4. I make a nice bed of potatoes and onions or other veggies like carrots or squash and add about half a cup of water and bake for two hours uncovered at 350F or depending on your oven and chicken size. Baste it half way through.
