8 c beef stock
salt and pepper for seasoning stock
2 c bread crumbs
1/2 c flour
1 c Parmigiano Reggiano cheese
3 large eggs
1/2 tsp nutmeg
1 tsp salt
1/2 tsp pepper

Directions:
Directions:
Heat stock, do not boil. Taste for seasoning and add salt & pepper to liking.

Prepare dough: In a bowl, combine breadcrumbs, flour, cheese, eggs, nutmeg, salt & pepper. The mixture should be firm but not too dry. Add more breadcrumbs if too wet - or a little broth if too dry. Put the prepared dough through a ricer to form little dumplings. Drop the passatelli into the hot broth and gently stir. Add cheese and simmer for 5 min, then serve.

This soup is the ultimate comfort food. It is light and delicate. It was always a family favorite in the Fall & Winter. I remember helping Mommy putting thru the ricer and cutting different lengths before placing into the broth. It was squiggly and looked like worms, but it was so delicious!!!
