Ingredients:  
2 Pkgs Trader Joe's Frozen Sweet Corn, cooked
3 C Cherry Tomatoes, Halved
C Red Onion, diced
C Cilantro, chopped
12 Slices Bacon, cooked crisp
9 Tbls EVOO
6 Tbls Fresh Lime Juice
3 Cloves Garlic, pressed (optional)
Feta Cheese, optional
Salt & Pepper

Directions:
Directions:
Combine Corn, Tomatoes, Onion, Cilantro and Bacon.

Whisk together: EVOO, Lime Juice and Garlic.

Pour Dressing over corn mixture and add Feta Cheese.



Best if prepared at least a half hour prior to serving so the flavors will marry.
