3 1/2 lb Pork Butt chopped 1/2-3/4 inch
1 small Onion finely chopped
1 1/2 tsp Caraway Seed
2 TBSP Salt
1/2 tsp Pepper
2 Clove Garlic Minced
1 pkg. Natural Pork Casings

Directions:
Directions:
Mix all ingredients well, add 1/4 cp water or beer to moisten mixture. Cover and Let stand in refrigerator for at least 8 hours. Then stuff pork casings. Make sure the casing a soft, pliable and evenly stuffed to ensure even cooking. When stuffing, rinse casings by running water through them to ensure no holes. Knot the end of the casing, stuff ingredients, if air bubbles are created poke small whole w/ a knife. Twist off the casings every 8 inches to ensure the kielbasa is easy to handle and cooks evenly.

Always test the first section by cooking and tasting before stuffing the rest to ensure the flavor is on target. Pepper, garlic and onions can vary in potency.

To cook:
Boil for 1 hr. 15 minutes or pressure cook or instapot* cook on high for 10 minutes on high pressure. Remove, drain, and brown in 350º oven for 10 minutes. You can then hot hold in a crockpot with juice from cooking until ready to serve.

Serve with lots of fresh horseradish.
