- c. cooked chicken
2 tbsp. oil
2 green onions, thinly sliced
2 c. cooked brown or white rice
tsp. salt
1 large egg
1 tbsp. soy sauce
minced parsley (garnish)

Directions:
Directions:
Cut chicken into thin slivers. Heat oil in large skillet. Add green onions and saute for 1 minute. Add meat and just heat through. Add rice and salt and stir until blended.

Beat egg with soy sauce and add to rice, stirring rapidly so mixture blends with rice before setting. Cook until egg mixture is absorbed and rice seems dry (takes a few minutes.)

Press rice into bowl with rounded bottom and turn out onto shallow dish with the top now rounded. Garnish with minced parsley.
