"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Directions:
Add butter and sugar to mixer bowl; cream until completely mixed. Don't overmix.
Add vanilla and eggs and mix until completely incorporated. Add baking powder and add flour one cup at a time. Divide dough into 3 equal amounts. Add a different color of food coloring to each part, mixing thoroughly.

Roll out each color of dough on a piece of wax paper the same size. Stack each color on top of each other. Flip the dough over using the wax paper and peel the paper off. Repeat with the last color of dough. Using the bottom piece of wax paper start to roll the dough as tightly as possible, removing the paper as you roll. Cover with plastic and chill until easy to handle. Slice roll into even pieces and place on baking sheet lined with parchment paper. Top with course decorator sugar. Bake at 350° for 6-8 minutes.

Personal Notes:
I was looking at Pinterest one day and saw a picture of these cookies and “just had to make them”. Like the candy cane cookies, this one will take time to perfect. I am still working on my technique.
