1 CUP FINELY CHOPPED ONION
½ CUP FINELY CHOPPED SWEET RED PEPPER
1 TEASPOON GROUND CUMIN
¼ TEASPOON GROUND CAYENNE PEPPER
1 LB. BOILING POTATOES, PEELED AND DICED
4 CUPS LOWFAT MILK
2 CUPS FRESH CORN KERNELS
SALT AND PEPPER
2 TABLESPOONS CHOPPED CILANTRO

HEAT THE BUTTER IN A HEAVY SAUCE PAN. ADD THE ONION AND SWEET RED PEPPER AND COOK SLOWLY UNTIL VEGGIES ARE TENDER. STIR IN CAYENNE PEPPER AND CUMIN. ADD POTATOES AND MILK. BRING TO A SIMMER AND COOK COVERED UNTIL POTATOES ARE TENDER (ABOUT 70 MINUTES). COARSELY MASH POTATOES IN POT. STIR IN CORN, SIMMER, COOK 5 MINUTES. SEASON TO TASTE WITH S &P. STIR IN CILANTRO AND SERVE.
