3/4 cup unsalted butter
4 ounces unsweetened chocolate
4 eggs
2 cup sugar
1-1/4 cup all-purpose flour
2 tsp vanilla
1 cup chopped pecans
1 12-ounce package chocolate chunks
1 12-ounce package caramels
1/4 cup heavy cream

Directions:

In medium saucepan, melt caramels and heavy cream until smooth.

In large bowl, microwave butter and chocolate for 2 minutes until smooth. Whisk in eggs, sugar, flour, and vanilla. Stir in pecans. Spread half of the batter into a 9"×13" pan lined with non-stick foil.

Sprinkle 1/2 chocolate chunks over the batter. Pour caramel mixture evenly over the batter in pan. Spread remaining batter over the caramel mixture and sprinkle with remaining chunks.

Bake at 350° for about 30 minutes. Cool completely before cutting into bars.

This was another recipe found in the monthly Pillsbury cookbooks. They were a favorite of the nurses at Baptist Hospital in Memphis. In fact, my co-workers had me make and enter them in a chocolate contest for Nurse’s Week and I won first prize!
