1/2 cup shortening (all or part butter or margarine)
3 ounces cream cheese
1 tbsp sugar
1/4 tsp salt
1 cup all-purpose flour
Apricot jam
1/4 cup flaked coconut

Directions:
Directions:
Mix shortening, cream cheese, sugar and salt thoroughly. Measure flour by dipping method or by sifting. Blend flour into shortening mixture.

Form dough into ball; wrap with plastic and chill at least 3 hours (If desired, can be refrigerated up to 1 week).

Roll dough out 1/8" thick on lightly floured cloth-covered board. Cut with 2" cookie cutter; place on ungreased baking sheet. Top each cookie with 1/2 tsp apricot jam.

Bake at 400° for about 10 minutes. Remove from oven; quickly sprinkle each tartlet with coconut and return to the oven.

Bake another 2 minutes or until the tartlets are delicately browned. Remove from the baking sheet. Cool. Makes about 3-1/2 dozen tartlets.

This is not really a “true” Christmas cookie, but this is the only time of year that I make them. It is perfect for someone wanting a treat that is “not too sweet”.
