1 small russett potato, peeled and sliced
6-8 cups powdered sugar
⅔ cup peanut butter

Directions:
Directions:
Cook the potato, drain and mash until lump free.
Add 4 cups powdered sugar and beat until well mixed.
Continue to add powdered sugar 1 cup at a time until thick (consistency of putty or cookie dough).
Place on waxed paper lightly coated with powdered sugar. Sprinkle some more on top.
Roll out into a ¼" thick rectangle.
Spread evenly with the peanut butter.
Starting at the long side, roll up tightly. Wrap in waxed paper, cut in half and refrigerate for at least 30 minutes before serving.
Cut in ¾" slices.
