3 eggs
1½ cups sugar
1 cup vegetable oil
2 cups flour
2 tsp cinnamon
1 tsp baking soda
½ tsp salt
1 tsp vanilla
1 cupped chopped walnuts or pecans (optional)
4 cups thinly sliced apples (about 5 apples)

Directions:
Directions:
1. In large bowl, beat eggs at high speed until thick and light. Combine sugar and oil, beat in the eggs.
2. Stir together the flour, cinnamon, baking soda, and salt. Add to the egg mixture along with the vanilla. Stir in the nuts if used.
3. Spread the apples in the buttered 13x9" pan, pour the batter over the apples, spreading to corners.
4. Bake at 350ºF for 1 hour or until top is pale golden brown and apples are cooked. Remove from oven, cool, frost with cream cheese frosting.

Cream Cheese Frosting:
Beat 2 packages (3 ounces eac) of cream cheese until fluffy. Beat in ¼ cup melted butter or margarine. Stir in 1¾ cup powdered sugar. Spread over cooled cake.
