1 can of black beans, rinsed and drained
1 can of corn, drained
1 can of Rotel,
1/2 red onion, diced
1 clove garlic, finely diced
1/2 lime, squeezed
1/4-1/2 bunch of cilantro, chopped
Garlic powder
Onion powder
Louisiana Seasoning (or any form of cajun seasoning)
Pepper

Directions:

In a large bowl, mix all of the ingredients together. Add seasoning by preferred taste, as well as the cilantro. Serve with tortilla chips. (the Lime tortilla chips really taste delicious with this).

Side note, if you take half of this recipe, it's also the base for the chicken tortilla soup that I'll add.

I use to go to this deli near where I worked when I was younger that made this black bean salsa that they served with their sandwiches that was so delicious. I decided to try make it myself after school started back up again and this is as close to it that I can remember. It's so easy and perfect for game night, food days at work, and other parties.
