1/2 cup brown sugar
1 teaspoon cinnamon
2-3 apples peeled, cored and thinly sliced

1/2 cup butter melted
2/3 cup white sugar
2 large or ex large eggs
1 1/2 teaspoon vanilla
1 1/2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup buttermilk

Mix apples with brown sugar and cinnamon and set aside
Mix butter and sugar, beat until blended. Add eggs and beat until mixed well.
Add baking powder and salt and 1/2 cup flour at a time, mixing with electric mixer after each flour addition and then add buttermilk in-between flour additions. Finish mixing an additional 1 minute.
Pour half of batter into greased loaf/bread pan and top with half of apples. Pour the remaining batter on top of apples then top with the remaining apples and press into batter.
Bake at 350º for 40-45 minutes and when center bounces back or when toothpick comes out of center clean. Let cool 15 minutes before removing from loaf pan.
Serve with ice cream or whipped topping.

This recipe is very easy to make and the cake can be used for dessert or as a breakfast bread.
The recipe can easily be doubled for more servings and freezes well for up to 6 months.
